    (1860's) (60 days) . Named for a Civil War veteran, George Admire. His 90-year old granddaughter gave his lettuce seed to Seed Savers Exchange in 1977. Large, bronze-tinged leaves stay tender, even in extreme hot weather. Slow to bolt.

    (50-60 days) The green form of Deer Tongue lettuce, it forms loose heads of thick leaves that have a buttery texture. Like other butterheads, the entire heads can be picked when young for baby head production.

    Butterhead; Rare; Sustainably Grown

    (60 days) A classic old French lettuce, described by the famous French seed company, Vilmorin, in 1885. This heirloom has a rosette of reddish-coloured leaves that deepen to a dark red in cool weather. (approx. 24,000 seeds per oz.)

    Looseleaf; Certified Organic

    (40 - 55 days) An ancient French heirloom lettuce that was introduced by Vilmorin in 1771 and brought to England in 1827. Heat-and-cold tolerant, this lettuce is sweet and tender and can be harvested throughout the summer.The beautiful, oak-leaf shaped leaves are sharply-serrated and medium-green in colour.

    Parris Island Cos Lettuce

    Romaine; Certified Organic

    (68 days) This is a classic romaine used in Caesar salads. An 1886 gardening book indicated that "millions of this variety are annually grown to supply the markets of London alone, where it is preferred to all others." Forming tall, slightly-ruffled heads of dark green leaves with a white heart, this lettuce has a crisp, sweet flavour and is slow to bolt. (approx. 24,000 seeds/oz)
